Peel the banana and then mash it with a fork to a banana puree
Separate the eggs and whisk the yolks together with the vegetable milk. Beat the egg whites in another bowl with a hand mixer until stiff
Stir the organic hemp protein powder and the salt into the egg yolk mixture, then fold in the beaten egg whites
Coat a coated frying pan with some vegetable fat and heat. Portion some pancake batter into the hot pan and fry over medium heat for approx. 3 min. on both sides until golden brown
Pour maple syrup over the finished pancakes and decorate with berries. For the topping you can use e.g. also fruit jam
